Enjoy these delicious pancakes that are gluten-free and high in protein, topped with banana and Breyers Delights Smooth Vanilla ice cream. They are easy to make with ingredients you probably already have on hand.
*Breyers Delights – (1) Smooth Vanilla, (2) Creamy Chocolate, (3) Mint Chip, (4) Sweet Berry Choc Chip and (5) Chocolate Orange & Almond flavours are gluten-free.
Gluten-free Protein Pancakes
- 100g gluten-free plain flour
- 1 scoop (25g) gluten-free whey protein (of your choice)
- 1 large egg
- 200ml skimmed milk
- Cooking spray
- Breyers Delights ice cream
- 1 banana (optional)
- Chocolate flavoured dessert sauce (optional)
- Coloured sugar strands (optional)
Put the flour, whey protein, egg and the milk into the blender (and blend). Lightly oil a frying pan so that the oil just covers the surface, stir the batter then spoon some into the hot pan.
Cook the pancake, loosening the edges until the base is golden. Serve with high protein ice cream or fillings of your choice.
